Potatoes Boulangère

Potatoes Boulangère, sometimes known as scalloped potatoes, is a wonderful dish - simple, tasty, filling. Falls in the comfort food category for me!

Boulanger is the French word for baker. Dishes called "à la boulangère", or simply "boulangère" were typically large pieces of meat baked in the baker's oven, accompanied by potatoes and onions. This way of preparing potatoes is a French classic.

 
 

Recipe

Ingredients

  • 30 g (1 oz) Butter
  • 450 g (1 pound) Potatoes
  • 225 g (1/2 pound) Onions
  • 375 ml (1 1/2 cup) Beef broth
  • Salt, fresh ground black pepper

If you are using commercial broth, make sure you taste it and reduce the salt (or eliminate it) from your recipe. Commercial broth or stocks are often too salty. Also, if you need a gluten free dish and you purchased broth, make sure the product doesn't have gluten in it.

Preparation

  1. Pre-heat the oven at 200 °C (450 °F)
  2. Butter the bottom and side of an oven-proof dish
  3. Peel and wash the potatoes and onions
  4. Slice the potatoes and onions in very thin slices - 2 mm (1/16")
  5. Place the potatoes and onions in the buttered dish in alternate layers
  6. Season the top layer with salt and pepper, and the rest of the butter in small dabs
  7. Pour the beef broth in the dish
  8. Cover with aluminium foil
  9. Bake in the hot oven for an hour
  10. Remove the foil and cook another 15 minutes.
