Pie Dough (Shortening)

Making your own pie crust is straightforward and affordable. I learned this recipe when I was 8 years old, from my grandmother.

My grandmother told me that when she was a girl, you were ready to be married-off if you could make pie dough and roll it evenly in a nice circle. I don't know about that. But it takes a bit of practice to get it right. Once you got it, all goes well. She put a bit of white vinegar in her dough, she said it made the crust more flaky. I like it, it works for me.

 
 

Recipe

Ingredients

  • 500 ml (2 cups) Flour
  • 250 ml (1 cup) Chrisco Vegetable Shortening
  • 60 ml (2 oz) Cold Water
  • 15ml (1 tablespoon) White Vinegar
  • Salt

Preparation

  1. Put the flour with a pinch of salt in a large bowl.
  2. Put the shortening in the flour.
  3. With both hands, mix the flour with the shortening, rubbing slightly. The shortening bits will become smaller and covered in flour. You want to end up with "pea size" and smaller bits of shortening.
  4. Mix the water and vinegar.
  5. Add to the flour and shortening. Mix well.
  6. The dough will come together. Do NOT overwork it - when it sticks together as a ball, work it a bit longer and leave it be!
  7. If it is too "sticky", add 1 or 2 tablespoons of flour.
  8. Put in the refrigerator, covered for at least an hour before working.

Finition

  1. Roll as required by the recipe
