A simple salsa made quickly with fresh mango, onions, and fresh ginger.

Mangos offer a fruity, a bit acidic, flavour that marries well with chicken or pork. Onion and vinegar cooked together support the sweetness of the mango and provide their own. This salsa is versatile and enjoyable!

 
 

Recipe

Ingredients

  • 1 Ripe Mango
  • 1 Medium Onion
  • 30g (1oz) Fresh Ginger (walnut size chunk)
  • 50ml (2oz) Red Wine Vinegar
  • Vegetable Oil

Preparation

  1. Peel and dice the onion in small dices.
  2. Sweat ( Cook over low heat with a little oil or butter until tender.) [?] the onion in a small pan with the oil.
  3. While the onions are cooking, peel and chop the fresh ginger.
  4. Add the ginger to the onions, and keep cooking.
  5. While that is cooking, peel and cut the mango in small cubes (~5mm, or 1/4")
  6. Add the vinegar to the onion and ginger, and turn the heat on high.
  7. Reduce ( Boil down the liquid) [?] the liquids by half.
  8. Add the mango to the pot, and cook a minute or two more.
  9. Serve immediately, hot, or cool down 5 minutes and refrigerate to serve cold later.
