Easy Key Lime Pie

The lime juice sets the condensed milk - no baking required. Mix & let set - that's it. This is a classic, perfect on a warm summer evening.

 
 

Recipe

Ingredients

  • Pie Crust - Homemade or Premade
  • 150ml (2/3 Cup) Fresh Key Lime Juice
  • 395 g (14 oz) Sweetened Condensed Milk
  • 125ml (1/2 cup) Heavy Cream (Whipping or 35% Cream) - Optional

Mise En Place

  1. Pre-heat the oven at 180 °C (400 °F)
  2. If using homemade dough, roll it to about 25mm (1/8") thick.
  3. Line a 9" pie plate (or four 3" disposable pie plates) with the dough.
  4. Poke small holes in the dough with a fork (this will help avoiding shrinking while cooking).
  5. Bake the shell for 10 minutes.

Preparation

  1. Mix the lime juice and the sweetened condensed milk together.
  2. Pour the mix in the cooled down pie shells.
  3. Refrigerate for at least 2 hours.

Finition

  1. Whisk the cream to soft peak.
  2. Pipe the whipped cream on top of the pies.
  3. Enjoy!
