Chicken And Chorizo Claypot

Chicken and Chorizo cooked over rice in a clay pot. Really easy! The flavours and textures develop into a succulent dish.

Cooking food in a clay pot is common to many cultures around the world. It's quick and easy. My clay pot is glazed inside, so I don't need to soak it in water before cooking. Be careful though, some glazed pots use glazes that are not food-safe.

 
 

Recipe

Ingredients

  • 250ml (1 cup) White Rice
  • 250ml (1 cup) Chicken Stock
  • 75ml (1/4 cup) Soy Sauce
  • 75ml (1/4 cup) Mirin Sauce
  • 30g (1oz) Fresh Ginger (about 1 walnut size chunk)
  • 10 Medium Mushrooms
  • 3 Chicken Thighs (skinless)
  • 1 Red Capsicum (Bell Pepper)
  • 6 Small Chorizo sausage (250g / 1/2 pound)
  • 1 Lemon
  • 125ml (1/2 cup) Frozen Peas
  • 1 Small Hot Chili Pepper - Optional

I did this dish without the peas, as I hadn't realised I was out, but a bit of green would have made a big difference!

Preparation

  1. If your clay pot is unglazed, soak it in water for 30 minutes, and do not pre-heat your oven - you will be putting the dish in a cold oven and turning the temperature to 175°C (350°F).
  2. Pre-heat the oven at 175°C (350°F).
  3. Put the rice at the bottom of the dish.
  4. Add the chicken stock, soy sauce and Mirin sauce.
  5. Cut the mushrooms in half, and put them in the pot.
  6. Chop the ginger, place it in the pot.
  7. Place the chicken in the pot in one layer.
  8. Cut the capsicum in coarse chunks, and put the chunks in the pot.
  9. If you are using hot chili, slice it thinly and add it to the pot.
  10. Add the Chorizo sausages to the pot.
  11. Cut the lemon in half. Press the juice of both halves in the pot.
  12. Add one of the lemon halves in the pot.
  13. Cover, and put in the oven.
  14. Bake for about one hour.
  15. Pull out of the oven, add the peas, cover, and return to the oven.
  16. Bake for another 15 or 20 minutes.

Finition

  1. Take the lemon out and discard it.
  2. Pull the sausages out and set aside on a plate.
  3. Pull the chicken out and set aside on a plate.
  4. Scoop the rice, mushroom, capsicum and peas and serve in plates.
  5. Add the sausages and chicken to each plate.
  6. Enjoy!

  1. I do not have a clay pot and plan to use my dutch oven and try this recipe this weekend. Is there anything I should do differently?

  2. Hi Cindy, there isn't too much difference between glazed claypots and dutch ovens in my experience. The only thing is, you might wish to use a slightly cooler oven. Do let me know how it went :)

  4. Let me preface my comments by saying that I do not own a clay pot. Second, it is important to note that I live in a very rural area,with one grocery store nearby, that does not carry any "unusual" ingredients such as chorizo or mirin.

    So, first, I had to make this dish in my dutch oven. Second, I had to substitute kielbasa for the chorizo. Third, I had to substitue sherry with a little sugar added for the mirin.

    After all of that, this dish was still wonderful! I cannot wait to purchase a clay pot and buy some real chorizo and mirin to try this again!
