Chicken and Chorizo cooked over rice in a clay pot. Really easy! The flavours and textures develop into a succulent dish.
Cooking food in a clay pot is common to many cultures around the world. It's quick and easy. My clay pot is glazed inside, so I don't need to soak it in water before cooking. Be careful though, some glazed pots use glazes that are not food-safe.
I did this dish without the peas, as I hadn't realised I was out, but a bit of green would have made a big difference!

The dish has been baked for about an hour, ready to add some peas.

I do not have a clay pot and plan to use my dutch oven and try this recipe this weekend. Is there anything I should do differently?

Hi Cindy, there isn't too much difference between glazed claypots and dutch ovens in my experience. The only thing is, you might wish to use a slightly cooler oven. Do let me know how it went :)

Let me preface my comments by saying that I do not own a clay pot. Second, it is important to note that I live in a very rural area,with one grocery store nearby, that does not carry any "unusual" ingredients such as chorizo or mirin.
So, first, I had to make this dish in my dutch oven. Second, I had to substitute kielbasa for the chorizo. Third, I had to substitue sherry with a little sugar added for the mirin.
After all of that, this dish was still wonderful! I cannot wait to purchase a clay pot and buy some real chorizo and mirin to try this again!
