Recipe
Ingredients
- 30 g (1 oz) Fresh Ginger
- 45 ml (3 tablespoons) Fresh Lime Juice
- 45 ml (3 tablespoons) Mirin or sweet rice vinegar.
- 10 ml (2 teaspoons) Sambal Oelek or Chili Sauce
- 1 Bunch Asparagus
- 75 g (3 oz) Snow Peas
- 200 g (1/2 Pound) Baby Gourmet Potatoes
- 1 Can (410 g / oz) Baby Corn
- Fresh Corriander (to taste)
- 2 x 150 g (5 oz) Beef Filet
- 15 ml (1 tablespoon) Vegetable Oil
- Salt, Fresh Ground Black Pepper
Mise En Place
- Peel the ginger, cut it to julienne ( Small sticks of approx 2mm x 2mm (1/16" x 1/16th").) [?] size.
- Prepare the dressing by mixing the ginger, lime juice, Mirin and chili sauce together.
- Cut the potatoes in halves (or quarter if they are bigger).
- Cook the potatoes in water until soft. Cool under cold water immediately. Drain well.
- Remove the ends and the "stringey bits" of the snow peas.
- Cook the snowpeas in boiling water for 30 seconds, just long enough to soften them up. Cool under cold water immediately. Drain well.
- Cut the asparagus in 2 cm (1") length.
- Cook the asparagus in boiling water until tender, but still a bit firm. Cool under cold water immediately. Drain well.
- Drain the liquid from the can of baby corn.
- Wash and coarsely chop the fresh corriander.
- Place these ingredients in a bowl (except for the dressing).
Preparation
- Season the beef with salt and pepper.
- Panfry the beef with a bit of oil. It's better if you keep the beef rare - but cook to taste.
- Let the beef sit for a couple minutes to "relax".
Finition
- Cut the beef in thin slices.
- Mix the dressing with the asparagus, snowpeas, potatoes and corn.
- Place the beef on top of the salad
