Series of "how-to" do several kitchen techniques. Theory about cooking, why food does what it does. How to keep yourself safe (no cut or burned fingers!), and keep the food hygienic (no food poisoning!).

These series are logical compilations of individual entries. Some entries appear in more than one lesson. You do not have to follow the order they are presented in, although you are likely to be more successful if you are familiar with the techniques and ideas presented in earlier lessons.

An overview of the main cooking methods found in recipes. Understanding the methods allows the cook to be more comfortable following recipes, and adapt recipes.

Sauces

Don't let sauces scare you. There is much to learn, but you can grasp the basics quickly and improve or expand your ability with sauces rapidly.

The Basics

Techniques and things to know to help you in all aspects of cooking. It may appear really basic, but it is important - topics such as hand-washing, knife-handling and boiling water(!) are covered.
