Pairing lamb and garlic is a classic combination. The garlic creme is a smooth, tasty sauce. It has character but not so much as to overpower the delicate taste of the lamb.
Roast Rack of Pork. Caramelised onions, a subtle taste of maple. Pears. Awesome!
Pork Belly. The fatty skin allows you to make great crackling. The maple syrup brings an interesting sweetness that goes well with pork. And the apple cider vinegar gives just a touch of acidity to balance it all out.
