Tonight's French Fries were soft, soggy almost. Certainly not my favourite fries. Burgers were good. But the fries, well, not at all what I'd like to remember.
I like to use Agria potatoes, or "golden" potatoes (Yukon Gold is a good variety in Canada or the US). They are usualy giving brilliant results. Not tonight though, not tonight.
And I know why! They are this year's new crop.
New year's potatoes never make good fries. I'll have to remember that - no fries for a while...
Oh well, it's healthier :)
